Kaiserschmarrn - the authentic recipe from Tyrol and a very healthy version

I just had the best Kaiserschmarrn of my life in Tyrol, Austria, here is the recipe!

This famous Austrian dessert is crispy on the outside, fluffy and light inside, and not to sweet!
This is how they prepare it in Tyrol, in the Angerer Alm:

Ingredients (for 1 person)

125 ml milk
60g flour [for the healthy version use for example brown rice flour!]
2 eggs
10g sugar [you can replace it with erythritol or brown sugar]
20g raisins
rum
5g vanilla sugar (much better with real vanilla!)
2 tbsp sugar for caramelising
Icing sugar for dusting
Some high quality jam (preferably plum, apricot)

How to prepare it:

Place the raisins in a bowl, mix with the rum and leave to stand for approx. 15 minutes. Separate the eggs and place the yolks in a mixing bowl. Pour in the milk, add the vanilla sugar and the flour. Mix to form a smooth dough. Beat the egg whites together with the sugar until it forms a firm peak, and fold into the dough mix. Pre-heat the oven to 180 °C. Melt the butter in a (coated) pan. Pour in the mixture and sprinkle the soaked raisins over the top. Cook the underside until light brown, turn over using a spatula and bake for 5 minutes in the pre-heated oven until golden brown. Remove the 'Schmarren' from the pan, and caramelise 2 tbsp sugar in it. Add the 'Schmarren' to it and coat both sides. Tear the ‘Schmarren’ into small pieces, using two forks. Dust with confectioners sugar. Serve with baked plums, a berry or fruit compote, or plum/apricot jam, or even apple puree or vanilla ice!
